Personally I prefer Xen and use it on my servers, unfortunately Xen is
no longer supported under Ubuntu and requires significant effort to get
it to work.
For creating virtual machines from the Ubuntu desktop I have been using
KVM and Ubuntu's Virtual Machine Manager software.

In intrepid all this requires is that you install ubuntu-virt-server and
ubuntu-virt-mgmt packages. These pull in everything you need.
