GUI for Servers

Instead of using a full blown GUI in a server environment, I prefer to
use webmin. It gives a web interface to do most if not all of the
administration you'll need to do.

http://www.webmin.com/

sudo apt-get install webmin

Assuming you are looking for the Gnome interface, use
sudo apt-get ubuntu-desktop
to install it.
