Not nearly enough for Unbuntu desktop. Assuming you want some level of
performance, and not be rebooting frequently, and not having to worry
about how many programs you have open. IG of RAM minimum. If you don't
reboot often (or don't want to) want to do things like run more than
one browser at a time, you'll likely want more. 4G recommended. This
isn't like the good ol' days when Linux desktop performed better than
Windows on less RAM.

Sucks the big one. There are many known issues with Intel chipsets.
Some are plain bugs, some are performance related. My home system (1G
RAM) was flawless on 8.04 (before the Intel driver changes), now on
9.04 it is a crippled beast that I have to be very careful how many
apps I have open (or reboot frequently). It is a major, major
degradation for me. There may be other issues, but this system with
this distro is a memory pig and performance dog. I doubt 2G would get
me back like the good ol' 8.04 days.
