Building a Point of Sale or (How does X work?)

In my 8.04 (GNOME) the start-up program definition lies in the following
menu:

System->Preferences->Sessions

You have to tweak at System->Administration->Login Window in order to setup
autologin options, including user option.

The problem is how to avoid keyboard shortcuts like alt+tab or win+e to
navigate out of our app?
