Simple Backup question.

Have you looked at amanda?  amanda is/was a tape backup system that
will do full and incremental backups to onboard hard disks, remote
storage and tape devices...

You need something that will do the incremental backups.  The actual
backup strategy is entirely up to you (and it's configurable in amanda
and all other  backup solutions) but I'd suggest at least a full
backup once every week and incrementals the other 6 days of the week.
And be sure to schedule them during the time when the server is least
active.

You can do a google search for linux backup solutions and you'll find plenty.

One thing you may also want to consider, as it sounds like this is for
a production system that's pretty important to your business, is look
into and consider purchasing one of the commercial products...  they
vary in complexity and price, but one thing you do get with the
purchase is support should anything go wrong and you need to do a
restore or to repair some weird uncommon issue.
