Try starting with the Ubuntu Server Guide.  Here is a link to the FTP section of the 9.10 version:

You could also try proftpd

I don't know whether the tools are similar enough that what you learn in Ubuntu will translate directly.  


If, after reading the link, you need more information or better answers, you may want to start a new thread.  Because this one was started in German, many of the ubuntu-users readers will simply ignore the thread and not notice the language change.
