I'm pretty sure there are separate ISOs you can download for Kubuntu, 
which uses KDE. You can also add KDE to an existing ubuntu installation 
via synaptic (install the kubuntu-desktop package). Pretty sure there's 
more options that those 2 as well.
You can pick your window manager of choice in the logon screen, and it 
remembers the last choice you made.
