Your mail-transport-agent line has made me realize why my previous
suggestions failed. I'd grepped bsd-mailx's dependencies for postfix
rather than for "default-mta" or "mail-transport-agent "... :(

Sorry!

Having said that, if you use "aptitude remove postfix" you're first
prompted to remove bsd-mailx. If you reply "n", you're then prompted
to install "lsb-invalid-mta", which installs a fake "a fake
/usr/sbin/sendmail".

What are the "instructions for building a dummy package"?
