To boot to recovery, you can amend the linux line of the entry
from
linux /boot/vmlinuz-x.x.x-xx-generic root=UUID=xxxxxxx ro splash quiet
to
linux /boot/vmlinuz-x.x.x-xx-generic root=UUID=xxxxxxx ro 1
