I'm glad that it's now working.

So changing "/boot" to be a primary partition made all the difference.
I could've sworn that I'd installed Linux onto logical partitions and
without a single primary partition in the past; maybe it's a
requirement for a mirrored "/boot", whether it's its own partition or
a directory on "/".
