Done!

Commenced in a slightly slightly different manner, didn't have to enter 
the mount -rw  command,. After "shift" on boot Ubuntu presented a 
multi-option screen, the last option being "login as root", or similar 
(can't remember the exact wording). However after that (as promised) the 
prompt became root at something. I reset the password and hopped back out.
