HOWEVER it looks like for some reason (probably a lack of maintainer) the
jitsi package has been removed from Debian, so it didn't make it into
Ubuntu 16.04 "Xenial."

It looks like once you narrow down the architecture and version numbers,
there are five packages offered: jicofo, jitsi-videobridge, jitsi-meet,
jitsi-meet-tokens, and jitsi-meet-prosody. (see below)

if the OP has had had trouble installing it, maybe there was a packaging
issue, since corrected.
I dug around and it looks like the primary support for jitsi is via their
mailing lists, so the OP might want to sign up for the user list (the first
