My Continuing Failed Restore Issue Saga

Well, after 3 days of trying to fix the boot issues since restoring my Ubuntu 14.04LTS Server Install. I decided to do a fresh install of 16.04 LTS Server. Had to since I never could get the MBR file fixed. Well, installed finished comes up but try to log in says my login isn't right. So I guess I will get to do it again. 
Now my game plan what I would like to do. Looking for ideas from you Ubuntu experts is this. Run live Ubuntu 16.04 on CD, so I can get To Gnome have my Restore Hard Drive on USB. So I can get, my config files and WordPress off the restore on to the new server along with the Web site data. Would that work? Any other ideas? Does anyone run a GUI on their server. I don't really like Command line reminds me too much of the days of Word Star and CpM operating system. I guess that dates me. I guess I could have said Cobal or Fortran. Waiting for your ideas here.
