As you could see by the headers, I send some of my mails from an iPad,
too. There are seemingly some issues depending on the used iOS version.
I suspect that I can't get rid of HTML and can't set up line break
defaults for the plain text part.

However, I never had a iOS version where selecting and cutting text
didn't work. It was also always possible to edit the subject and to
chose the cursor position to reply below the quotes.
