Exchange is nice, but there is a lot involved setting it up, and its
expensive. Also, it would be a bad idea to setup an email server from
scratch for the average user. There are a few distros out there with
everything installed for you. I would install one of those in a KVM
virtual machine, if you want linux-based.
One I use is 'SME Server' because I can modify the spam/virus filters to
include many free virus databases, and I can modify the spam filters in
many ways as well.
