it uses the "Task" field of packages instead of just meta package
dependencies (i.e. try "apt-cache show eog | grep Task") and your
dependency resolution can be slightly different. IIRC tasks also get
marked as "manually installed" when not installed via tasksel but via
apt. 

the official installers all install the task, not only the meta
package, so installing the above way will get you closer to what an
actual official installation gets you.
