Great question!

Do please let us know what you find out, and share your experiences
with the different options.

I haven't tried it, but you could probably edit a recorded Zoom session
with screensharing into something useful pretty quickly. You don't
actually have to have other participants :-) and Zoom gives you the
option of recording to local storage (so no big downloads)
