I've written a bug report about that grub-pc versus grub-efi-amd64
thing, and got an answer from Steve Langasek:
"It is deliberate that we install grub-pc along with grub-efi-
amd64-signed and shim-signed, for maximum boot compatibility regardless
of any changes that might be made to the firmware of the machine you're
booting on, post-install. Unless you are missing the latter two
packages, this is not a bug."
