How best to start over with new install

I'm running 20.10 on HP xw8600 server.

I've created a bit of a mess of the current install, and doubt I'm
skilled enough to fix it in place.

I have 5 discs set up in matched and mirrored pairs except for the
lonesome 5th disk which is set as its own pool

I've been running them in 3 zpools, 2 in 2 mirrored disk pools and 1
zpool with just 1 disk.

So, if I wanted to scrap the install and start over, what should I do, if
anything, with the disks prior to attempting a fresh install on them. 

Do they need to be cleaned for formatted etc in some way to avoid any
problems installing over an existing OS?

Are there any other kinds of things I should do to make it smooth
sailing?
