OK, I've broken out my spare server motherboard and an old hard drive
and set it up with Server 20.04, so I can mess with that not my main
server.

Plus done a lot of browsing of eBay until I found a weatherproof PoE
camera that somebody reviewed, mentioning that they could set a fixed
IP address etc. so I've ordered that one and now keeping the fingers
crossed that it will work for me.
