A file that *can* be corrected by the user is /etc/default/grub. The
entry to change the label is
GRUB_DISTRIBUTOR=`lsb_release -i -s 2> /dev/null || echo Debian`
Change to
GRUB_DISTRIBUTOR=`Ubuntu+Whatever_You_Like`
However, that only change the menuentry of the 'originating' or
'controlling' grub, not the os-prober entries of other Ubuntu distro's.
To really have control over all distro's, here's one that is a dedicated
or OS-independent grub.

I have this since the days of grub-legacy, but I think this method would
be far more difficult for a new user.
BTW, I have grub, systemd-boot, refind and msdos, gpt, uefi and
bios-legacy all in the same system -multiple disks. Not something I
recommend for the faint-hearted. A piano falling down is less stressful. :)
