Probably the guest at startup checked the virtual disks and it might
have taken much time. You can get starting and finishing times by
running 

  systemctl status 'systemd-fsck*'

and maybe more information by running

  journalctl -b | grep fsck

Maybe the Arch Wiki provides a a few pointers that are helpful for
Ubuntu, too (if the issue should be related to virtual disks).
