I do not want to be rude or mean, first let me say that. But what you
call it is not important compared to what the rest of the world calls
it.
You should check with Google if you are not 100% certain that you
*know* the correct terms, or all you will do is confuse everyone.
Always be as specific as you can and state info rather than leaving it
to assumptions.
An example of the terminology here:
https://askubuntu.com/questions/1126811/what-are-the-elements-of-the-gnome-desktop
I just Googled "parts of the GNOME 3 desktop"
That is not a taskbar. Taskbars contain an app launcher menu, a clock,
and usually some status icons.
GNOME calls that the Dash.
GNOME splits those functions I describe across the Dash and a top panel.
Ubuntu pre-installs an extension called "Dash to Dock" which turns
part of the Overview screen (the thing you get when you press
Activities) into an ever-present dock with some extra shortcuts and
things.
So, depending on what you pick on the login screen, you might be
looking at and talking about the GNOME dash or the Ubuntu dock, but it
isn't a taskbar.

OK...
Do you have the GNOME Extensions helper app installed?
If not, add it.
https://linuxconfig.org/how-to-install-gnome-shell-extensions-on-ubuntu-22-04-jammy-jellyfish-linux-desktop
Then you can easily see in one place what additions and extras you
have and can disable them.
