ubuntu-22.04 Installer won't let me delete partition?

As I wrote (step 8), I can create crypted partitions this way.

But there is no way to delete and/or resize existing partitions. So I have to
boot into live desktop to use gparted for repartitions, then boot desktop
installer to make them encrypted, tehn finally boot server install to do the
real install

pretty much ridiculous!
