You probably need much more than a tutorial.  :-(  If you want a Linux tablet, 
the easiest option would be something like this:

Raspberry Pis run Debian (which is what Ubuntu is based on), but this should 
be "close enough".  I don't know how available Raspberry Pis are at present 
(the chip supply chain is "catching up", so maybe not too bad).  Other Pi-ish 
SBCs might be more available and some do have Ubuntu images available (eg 
Orange Pis, Odroid M1s, and others), and these boards should also work with 
the 10" touch screen (might not fit the mounting in the touch screen like a 
Raspberry Pi would, but the cabling will work)
