I found another post - that change the line for xorriso for -e to
-e '--interval:appended_partition_2_start_1039012s_size_10068d:all::'
where this:
-e --interval:appended_partition_2:::
did not work before.
NO idea what this does - but this seems to allow the NUC to boot USB
