Meanwhile I found a description on how to install Ubuntu on a NUC computer here:

In this description is outlined how to do the partitioning if you have a
completely empty disk and want to set it up for installing multiple Linux
distros. :)
The installer seems to give manual partitioning options when dealing with a
pristine disk that include the creation of the EFI partition, the root and home
partitions and leaving space for further expansion.
I will try this out with a Ventoy boot USB tomorrow.
The description is using an older version of Ubuntu but I hope the newer ones
work in a similar way...
