Ubuntu STR 25.10 installs but won't boot (lenovo ThinkPad T420)

I downloaded Ventoy 1.1.07.

I had a look using the Ventoy2Disk.sh script and  it said it had version
1.0.62 which I looked up online and it was apparently released 2021-12-02
and so was ancient.

I used the same script to update the Ventoy memory stick from 1.0.62 to
1.1.07.

Today I learned you can get the version number of the software used by a
Ventoy stick by booting it and looking at the bottom left hand side of the
screen...
