I stopped using apt-proxy because it required you to set up repository 
names on the server, that the clients then needed to refer to.  With 
apt-cacher, on the client, you just prefix the name of the repository 
with the ip address of the apt-cacher server and the port. 

So, when you stop using apt-cacher, the repository names are all still 
in your sources.list file - you just need to remove the prefix.  Also, 
if one client needs to access a repository that is not set up on the 
server, it just puts the prefix in, and the new repository, and it all 
just works.  With apt-proxy you would need to set it up on the server as 
well as on the client.
