[ubuntu-za] Applications menu

I am running Hardy and need to alter the menu, namely 
Applications->Programming->Eclipse to point to the version of Eclipse, version 
  3.3.2, in my home directory rather than the one Ubuntu thinks is correct, 
namely 3.2.
Please tell me where I alter the menu entry?
