Hi Craig

You probably want to have a look at /etc/gdm/PostSession/Default and  
/etc/gdm/PreSession/Default. Any commands you add to these files will be  
run before/after Gnome login/logout respectively. The best way to ensure  
that all the guest users private data is deleted would likely be to delete  
the entire home folder upon logout and replace it with a "clean" folder  
where all the custom configurations like bookmarks etc resides. By giving  
the guest user the right privileges you can avoid system settings etc.  
being changed during the guest sessions.
