Thanks for the input.  I've looked at the options and made my choice.
Here's some feedback:

- Add audio to presentation
This works, but it also limits the use cases to a PC running the
appropriate presentation software, e.g. can't be used on a DVD player

- Export as Flash
Very easy, but it ignores animation.  I use plenty of animation but only
get the final state of the slides exported.  This is probably a
limitation inside OpenOffice which might be removed in future.

- Screencast
This works well for a blog but if you need to voice over with several
tries until its perfect, this approach is not ideal.

- Pitivi/Openshot
Although is the more difficult option it gives me the freedom to do
things the way I need to, i.e. quality, timing, re-recording, output
formats, etc.
