So it is! Seems like I have to catch up with the times :-)

Ian, did you end up reinstalling 10.04? I tried some more researching
on your hardware, nothing stands out.

I had PC's well 10+ years old (I refurbished old PC's), my experience
with them taught me that: failing hardware cause the most obscure
problems, and hardware problems are also the most difficult to track
down sometimes!

That board was released in 2004, have you updated the BIOS since then?
 *Recommended* instructions you should read:
http://www.intel.com/support/motherboards/desktop/sb/cs-022312.htm

Here is the latest BIOS for your MB:
http://downloadcenter.intel.com/Detail_Desc.aspx?agr=Y&DwnldID=10130&ProdId=950&lang=eng

I must stress, take your time with these instructions, if something
goes wrong your MB may be left in an unusable state. It happened to
me, power outage in the middle of an update :( Even so, personally, I
do BIOS updates :-)

I just saw in the release notes, this BIOS fix, which may likely solve
your issue (but I cant guarantee it will, depends if it relates to
on-board or your FX card):

- Fixed and issue of not defaulting video to the proprietary video card
