I've done something similar...some time back,

You can start reading the samba manual if you have not yet done so, most 
info are there,

I also have webmin installed on all my servers which makes 
administrating them much easier.

now what i did was to hide the folders for certain users from the main share
then I added the shares and gave the user name allowed to access the folders
you can either set samba to use its own user list(recommended) or use 
your linux users

now to access the shares have the user connect by mapping a network 
drive, type the \\ip-addres\sharename   then specify another user name 
and password also, if you leave out the password it still might work(by 
typing the password later)...but no guarantees there.

The manuals are very good you should learn allot there.
