Xubuntu doesn't use Unity, it uses XFCE and different default applications.

You can actually have both installed at the same time.
apt-get install xubuntu-desktop
(but that changes some defaults that may not be entirely trivial to
undo, but possible)

yes, all your configs is in your home folder so no matter which
desktop environment you run it is always stored in the same place.
