Pop is designed to work like that, imap would solve the issue.
I am not certain about what you mean about the weird folder issue though.
Imap syncs both ways so if you make a folder in tbird the same would appear
as a label in google and vice versa.
Hows about letting her use the web interface? I know we are all anti
Google, but that is the best way of using gmail imo. In fact, I don't even
have a mail client installed atm.
Bonus is that if you are away from the house she can give you her password
and you can solve an email issue for her by logging into her account.
If you are worried about offline, if you use Chrome/Chromium you can have
the last 30days of gmail available offline as well as offline editing of
Google docs (including spreadsheets as of recently).
Use the google apps tool on her devices (iPad/iPhone/Android) and
everything should work together nicely.
In fact, if you reallyreally want to go Pop on Thunderbird, use the Google
app on her mobile device and work around the pop issue.
