There is a huge demand for entry level and cheap Linux admins.  While 
some over-qualified people would take that work, the employers know they 
they would leave as soon as something better came along, so they never 
try them.

So what I did is find a few companies and consulting firms that use 
Linux and have entry level admins, and I am the guy they call with the 
young kid gets stuck.  I charge a lot more then him, but they only need 
me occasionally.  You just need enough different companies to keep you 
fed, but not to many to service when all hell breaks loose. :)
