When you say you can't increase the resolution above 1024*768, what
exactly do you mean?

(II) intel(0): EDID vendor "SAM", prod id 263

Your xrandr output and Xorg.0.log indicates several larger resolutions
should be available.

  1600x1024 (0x3e) 103.1MHz +HSync +VSync
        h: width 1600 start 1600 end 1656 total 1664 skew 0 clock 62.0KHz
        v: height 1024 start 1024 end 1029 total 1030 clock 60.2Hz
  1280x1024 (0x3f) 108.9MHz -HSync +VSync
        h: width 1280 start 1360 end 1496 total 1712 skew 0 clock 63.6KHz
        v: height 1024 start 1025 end 1028 total 1060 clock 60.0Hz
  1280x1024 (0x40) 108.0MHz +HSync +VSync
        h: width 1280 start 1328 end 1440 total 1688 skew 0 clock 64.0KHz
        v: height 1024 start 1025 end 1028 total 1066 clock 60.0Hz

Try removing your ~/.config/monitors.xml and using the xrandr command
line tool to set your resolution. If that works, then maybe there's a
bug in gnome-display-properties or something.
