looking though http://www.mail-archive.com/grub-devel@gnu.org/msg07998.html there seems to have been some patches to allow sending options to background_image such as,
background_image --mode=scale <image>
but they don't seem to have reached svn as far as i can see for whatever reason. background_image doesnt seem to take anything apart from the actual image file at the moment, i dont know if its not being done or just being done a different way
