Closed:
I've open a "hole" in my server's firestarted in 5353 for LAN.
I've specified in my client's avahi the address of the sever (in /etc/avahi/hosts)
I've specified in my client's avahi the name of the domain (in /etc/avahi/avahi-daemo.conf : "domain-name")
I've charged the pulse audio applet in my client and make it loaded at start-up
(Witch one of these modification was really necessary is hard to say now)

Things seems to be ok now (but still some lags in video stream... that I
did not have with Ubuntu 8.10)
