Here's an interesting bit to add:

I scanned a 3-page document (greyscale), but, as per this bug, couldn't
save as a PDF.  So, I saved it as jpg (3 separate images).  Then, after
exiting and going back in to gscan2pdf, I created a new document
(project?) and imported those 3 pages.  This saved as PDF just fine.

Somehow, the act of scanning is mucking up gscan2pdf.  Importing instead
of scanning (the exact same images scanned earlier) will bypass the bug
and allow saving to pdf.

It's at least an easy work-around.
