FIXED:
I removed the lightning-extension (Tools/Addons) from Thunderbird - this is probably installed direct from Mozilla?
And replaced it with the one from the repositories and re-started Thnderbird and all appears to be back.

Perhaps something should be added to the Ubu package to prevent this?
