Escape will only do the job if you increase GRUB_HIDDEN_TIMEOUT in
/etc/default/grub; it's not possible to detect Escape being held down
when GRUB has a zero delay.

I'm sorry you don't like this; I can only suggest taking it up with the
desktop experience team.
