have you tried the command
pasuspender -- winecfg
?
You can start a program by issuing
pasuspender -- wine .wine/drive_c/Programmi/Macromedia/Flash\ 8/Flash.exe 
It suspends pulseaudio for a while and lets you use wine without the hassles it brings.
