I didn't check the dependencies of the dependencies, but I suspect non
of the hard dependencies adds Evolution. Likely an optional
dependency ("recommended"/"suggested" dependencies) of a
dependency does.
Use the package management tool of your choice in a way, that it does
not install optional dependencies.
Assumed Evolution should be a hard dependency, of a hard dependency,
then install an Evolution dummy package. Empty dummy packages can be
easily build using equivs,

Evolution provides nothing GDM needs, so installing a dummy won't break
anything, but I suspect Evolution isn't a hard dependency of a hard
dependency.
