Thanks for taking your time to report this issue and help making Ubuntu
better.
Based on the description, you are not using xorg, so I assume you are
running wayland. If that is the case, this is likely a duplicate of bug
1713313. Unfortunately it is a known issue that several applications
requiring root permissions fail on Wayland.
However, the title seems to indicate that it fails because multiple
screens are connected. If the program works as expected when only a
single screen is attached, then it sounds like a separate issue.
When reporting bugs in the future please use apport by using 'ubuntu-
bug' and the name of the package affected. You can learn more about this
functionality at https://wiki.ubuntu.com/ReportingBugs.

Bug description:
I have multiple monitors. Gparted doesn't execute.
I'm using ubuntu 17.10 fully updated. AMD A6-9500 CPU with built in graphics. Not using xorg.
Running from commandline, I see the following in the output.
No protocol specified
(gpartedbin:5456): Gtk-WARNING **: cannot open display: :0
Of course both displays I have render OK otherwise.
