[SRU][kernel-snaps-uc24.04/pc][PATCH 0/1] snapcraft.yaml: update kernel version

[Impact]
The kernel and nvidia library versions for the snap have been
temporarily hardcoded and need to be updated every sru cycle. This also
removes two unnecessary debug print statements and cleans up an
unnecessary set of quotes.

[Fix]
Bump linux-image-uc-generic version 6.8.0-52.53 -> 6.8.0-56.58

[Test case]
Tested build changes by rebuilding. Version change is not testable until
the linux-image-uc-generic 6.8.0-56.58 version is available.

[Where problems could occur]
Build will break if the version is not correct.
