You should be able to just fine by finding the packages and manually
installing them - you will get new menu entries in grub just like any
kernel addition.
However, care should be taken if you run proprietary video drivers, as
these probably will break. It might even break free drivers depending on
their particular xorg/kernel requirements. But you at least can boot back
into other kernels if there are problems.
Another option is to try so-called vanilla kernels, ones that have not
been modified for Ubuntu use

You can try older, current and newer versions
