FOSS involvement on non-IT resumes/CVs?

Sure add it, I added a section "Other experiences" to my CV with
mentions of some non-profits I am working and/or worked for as a
volunteer.  But like Jane said: don't add too many details, they will
ask during the interview if they want to know more.
