I have encountered that and here are my noted to correct it from the last time 
it happened.

Video Settings    (Adding to Monitor resolution availability settings)
2008-08-20  To add video resolution settings to those made available by 
default in Ubuntu 8.04 :

[ALT]+[F2] 
Enter:  " gksudo displayconfig-gtk "  (without quotations)
(Can also enter this from a terminal)
Choose Generic and the resolution that your monitor supports.  Note that there 
is an option to use Wide Screen.  On virtual machines I do not use that.
Note that selecting the driver for a specific monitor may not work correctly 
unless you have installed the specific driver.
With the ViewSonic UltraBrite A90f+, using the settings in Ubuntu for that 
monitor produced a screen display much too large.

I selected a Generic CRT monitor of resolution 1024 x 768 and it loaded a 
series of resolutions from which I could then select using [System], 
[Preferences], [Screen Resolution] to try out various resolutions until I 
found the one I wanted.  There are options for flat screen and CRT.   

If you still have trouble, I have some older notes that go into even more 
detail and involve downloading some files.
